Fabián García – Father of New Mexico Chiles

Fabián García was a pioneering horticulturist whose work in the early 20th century laid the foundation for modern New Mexico chile peppers. In 1921, he introduced the New Mexico No. 9, a standardized chili variety that became the genetic ancestor of all modern Hatch and Anaheim peppers.

García’s research at New Mexico State University revolutionized chili cultivation, ensuring that farmers could grow more consistent, flavorful, and commercially viable peppers.
