Maybe we went too far?

Last night, the Gator Jigsaw broke out of its titanium containment chamber. Before we could stop it, it got into the lab, devoured every Mustard Primotalii specimen we had, and mutated into something otherworldly.

There was only one option left.

We nuked it with capsaicin.

That was a mistake.

The result is Atomic Gator, a limited-edition superhot blend built from two extraordinary peppers: Mustard Primotalii, created by Tom Broome and grown by Travis Brown of TsWicked Spice, and Gator Jigsaw, created by Rocco Maltesi and grown by Dallas Hicks, of Hot Rocket.

Underneath all the theatrics is a blend we took very seriously. The two peppers contribute a surprisingly complex base of fruit, subtle citrus, light floral character, and earthy green notes, with a faint darker edge underneath. Then we elevate the blend with a dash of natural capsaicin extract, pushing the heat far beyond what either pepper delivered on its own without burying their natural character.

The result is not simply “hot.” It has a real pepper flavor first: fruity, slightly bright, earthy and almost savory at moments. Then the capsaicin comes online and changes the conversation completely.

And despite the name, Mustard Primotalii does not taste like mustard. “Mustard” refers to the unusual olive-yellow coloration of the pepper. No mustard powder, mustard seed or mustard flavoring is used in Atomic Gator.

Inside the Experiment

Those numbers matter. Superhot pepper varieties can vary dramatically from plant to plant, farm to farm and harvest to harvest. We don't use somebody else's estimate for what a pepper is supposed to be. We test the peppers we're actually putting into the grinder.

Heat Level

Extreme: ~1.5 Million SHU (9.5 out of 10)
This is serious superhot territory. Atomic Gator begins with two lab-tested pepper varieties measuring approximately (Mustard Primotalii testing 350k SHU and Gator Jigsaw measuring 175k SHU), then gets fortified with natural capsaicin extract (~15 million SHU) to reach a formulated target of approximately 1.5 million SHU.

The natural peppers give you a brief opportunity to taste what is happening before the extract accelerates the burn. Expect intensity, persistence, and a little regret.

Tasting Notes

• First Impression: Fruity and pepper-forward, with subtle citrus brightness and earthy green undertones.
• Development: Light floral and sweet-fruit notes give way quickly as the capsaicin begins to build.
• Heat: Fast-rising, aggressive and substantially hotter than either pepper on its own.
• Duration: Long and persistent. The natural pepper burn builds into a much broader, deeper capsaicin heat.
• Overall Flavor: Fruity, bright and earthy with a darker superhot character underneath. The goal is extreme heat without reducing the experience to flavorless fire.
