David Cappiello
Location: United States (Connecticut)
Known For: Creator of the 7 Pot Brain Strain chili pepper
David Cappiello is a respected figure in the chili pepper breeding community, best known for his work developing the infamous 7 Pot Brain Strain, a superhot pepper variant of the Trinidadian 7 Pot. The name “Brain Strain” comes from the pepper’s extreme wrinkling and bulbous lobes, which resemble the convolutions of a human brain.
Cappiello began working with 7 Pot seeds sourced from Trinidad, one of the chili-growing epicenters in the Caribbean. Through several seasons of selective breeding and stabilization, he cultivated a phenotype with a particularly gnarly texture, violent heat, and deep red coloration. The pepper gained popularity through chili enthusiast forums in the early 2010s and quickly became a mainstay among growers of extreme heat peppers.
Though not as publicly visible as breeders like Ed Currie, Cappiello’s work has had a lasting impact in the superhot world. The Brain Strain has inspired numerous spin-offs and hybrids, and remains one of the benchmark varieties in the “7 Pot” family.
Cappiello shared his seeds widely through chili grower communities, helping the Brain Strain spread organically across the U.S. and Europe. While he hasn’t commercialized his work in the same way others have, his legacy endures through the continued cultivation and admiration of the Brain Strain by growers and hot sauce makers alike.
