SpiceQuest was created from a simple belief: heat should be intentional. Most kitchens rely on anonymous flakes that overpower. But chili peppers are as varied and expressive as wine grapes.
We source exceptional peppers, lab-test them for precision, and house them in stainless steel grinders designed for control.

Every number represents a distinct personality, from bright and citrus-forward to deep and volcanic. The pepper comes at the end, where it belongs — a finishing touch that preserves fragrance and reveals complexity.
The recipes that follow are built around these five numbers. Each dish is designed to showcase a specific grinder at its best.

Scotch Bonnet — The Awakening
Scotch Bonnet Jerk Chicken
The heat is warm and citrus-bright, never overwhelming.
Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp fresh thyme
- 1 tsp ground allspice
- 1 tsp smoked paprika
- Zest and juice of 1 lime
- Sea salt
Method
- Combine olive oil, garlic, thyme, allspice, paprika, lime zest, lime juice, and salt.
- Rub deeply into the chicken. Marinate at least 1 hour.
- Grill over medium heat or roast at 425°F for 35–40 mins.
- Rest 5 minutes.
- Finish with a light grind of Scotch Bonnet (No. 2) just before serving.
Habanero — The Lift
Habanero Avocado Toast
Floral, clean heat that lifts the richness.
Ingredients
- 2 slices rustic sourdough
- 1 ripe avocado
- Juice of ½ lemon
- Sea salt & extra virgin olive oil
- Optional: soft-boiled or poached egg
Method
- Toast the bread until golden and crisp.
- Mash avocado with lemon juice and salt.
- Spread generously over warm toast.
- Drizzle with olive oil. Add egg if desired.
- Finish with a restrained grind of Habanero (No. 4).
Brain Strain — The Complexity
Brain Strain Coconut Curry Shrimp
Creamy sweetness meets confident fire.
Ingredients
- 1 lb large shrimp, peeled/deveined
- 1 tbsp coconut oil
- 2 tbsp red curry paste
- 1 can full-fat coconut milk
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 tbsp fish sauce
- 1 tsp brown sugar & fresh basil
- Cooked jasmine rice
Method
- Heat coconut oil. Stir in curry paste until fragrant.
- Add coconut milk and simmer 5 minutes.
- Add bell pepper and snap peas; cook until tender.
- Stir in shrimp, fish sauce, and sugar. Cook 3–4 minutes.
- Spoon over jasmine rice. Garnish with basil.
- Finish with a careful grind of Brain Strain (No. 6).
Butch T Scorpion — The Focus
Butch T Spaghetti Marinara
Deep tomato sweetness, sharpened by a focused heat.
Ingredients
- 1 lb spaghetti
- 3 tbsp olive oil
- 3 cloves garlic, thinly sliced
- 1 can whole San Marzano tomatoes, crushed by hand
- Sea salt & fresh basil
Method
- Cook spaghetti in salted water until al dente. Reserve ½ cup water.
- Sauté garlic in olive oil until fragrant.
- Add tomatoes and salt. Simmer 15 minutes.
- Toss pasta with sauce, adding reserved water if needed.
- Finish with torn basil and a restrained grind of Butch T Scorpion (No. 8).
Carolina Reaper — The Crescendo
Carolina Reaper Pho
A whisper of fire rising through steam.
Ingredients
- 8 cups good beef broth
- 1 onion, halved & 1 thumb ginger, sliced
- 1 star anise & 1 cinnamon stick
- 8 oz rice noodles
- Thinly sliced beef or mushrooms
- Herbs: cilantro, Thai basil
- Bean sprouts & lime wedges
Method
- Char onion and ginger in a dry pan.
- Add to broth with anise and cinnamon. Simmer 20 mins.
- Cook rice noodles. Divide into bowls.
- Top with raw beef/mushrooms. Ladle hot broth over top.
- Add herbs, sprouts, and lime.
- Finish with the lightest grind of Carolina Reaper (No. 10).
