“The Green Bite”
Gator Jigsaw brings an unmistakable mustard-green look and sweet, fruity character to a single-pepper limited edition. Grown for this release by Dallas Hicks, these big, irregular pods are distinctive before the first taste. This is pure Gator Jigsaw, not the Atomic Gator blend.
Heat and Flavor
Lab-tested at 174,591 SHU, this batch sits close to No. 4 Habanero in the SpiceQuest Pro Kit. Sweet, fruity pepper flavor gives it a place at the table beyond sheer heat. Start with a small amount and build to taste.
The Pepper
Gator Jigsaw is a Capsicum chinense variety known for large, irregular pods that mature to a yellowish-green or mustard tone. That green appearance is part of its character, not a reason to assume the pepper is unripe.
For more about the variety and this batch’s place on our heat scale, explore the Gator Jigsaw Field Guide.
The Grower
Dallas Hicks grew and supplied the peppers for this release. Based in South Carolina, Dallas cultivates rare varieties on a family-run farm. Meet the grower behind this batch and discover more of his peppers.
